A good percentage of people just seem to have very little capacity to think a step or two ahead about what they're doing and why they're doing it. Using a more attractive version of themselves (or even of someone else) to flirt, sext, get attention/love etc. probably feels really fucking good to them in the moment... so they do it.
I think most of the time once it actually comes to meet up they freak out and decide not to, but many people still will just show up, somehow expecting that things will be just fine even though they've been misrepresenting themselves the whole time.
I did the online dating thing twice, and both of the times I don't know that I would have picked the person who I actually met up with out of a lineup to be the same person as their profile pic. That turned me off to them from the start to the point that I don't think I could have ever had a genuine connection with them, the relationship started with deliberate deceit.
Idk if using older or doctored pictures of yourself counts as catfishing per say, but it's definitely shady. Deliberately lying about your age would make it an automatic 'nope' for me, if someone's first instinct is to lie that will carryover to other things as well and create many problems down the line
