In Chinese culture, "Hot Pot" or "Fire Pot" (direct translations) use a lot of these mushrooms.

IMO, oysters taste very good in hot pot, they have the consistency of an oyster but meaty like a mushroom when cooked in hot pot, whereas shiitake have a very distinct and unique taste. I'd say shiitake is more chewy than oysters, but I never felt it taste like steak?

Also, you may want to try some maitake, they are extremely good as well! I have a whole list of mushrooms you may want to try (beware, I am not sure how well they go in dishes other than hot pot) in hot pot, but I can't list it now.

I'll talk to you later about this. If you want to try hot pot, try it out in a good, authentic Chinese restaurant first, then try it at home if you like it!
