Rediscovering cinnamon
    #24070410 -

Lately i have been eating black beans once a day.  Kinda wondered what cinnamon would be like with beans and the usual spices.  Checked online and recipes add a little cinnamon exist.  This isn't what you would typically associate with cinnamon.  Usually people associate cinnamon with sweetsmand sugary rolls.

Well it's awesome!  So earthy and flavorful.  Tonight i soaked black beans with salt, cinnamon, garlic powder, onion powder, basil, pepper and liquid smoke.  I never rinse by beans and acter soaking go to boil and simmer.  I also had some crock pot chicken deboned and deskinnd that cooked in bbq, chicken spice and liquid smoke.  Mixed all that with rice, the beans and veggies.

Ever cook not bake but cook dinner with cinnamon?  If not give it a try.

I make homemade pizzas and cook them with some cinnamon.  Delicious.

I've added cinnamon to beans, but never soaked them or cooked them with cinnamon in it might give that a try.

Try not adding the salt to your soak, beans cook faster when you don't salt them. Black beans that haven't been soaked before putting into water cook faster than most other beans done that way, I'm not sure how long, but it's somewhere between an hour and an hour and a half when salt hasn't been added to the water.

Tried cinnamon in the rub for pulled chicken once. Didnt like it, but make hard candies with cinnamon now and then, its sharp, but good.

Soak beans overnight
Ditch water
Put beans in a pot and fill with semi cold water about 2 inches above beans , add celery , carrot some whole garlic  and thyme.
Bring to a simmer and keep at a simmer , don't boil hard .
The beans will take roughly 25 mins , just eat a few around this time and see if you're happy with the texture.
Once done add salt and a little olive oil.
Transfer beans and water to a flat dish and allow to cool, store beans in the water they were cooked in , better that way.

Op -cinnamon can be used with a lot of things. Try black beans with cinnamon , fresh ground black pepper and sweet potatoes - make sure to add copious amounts Of salt and butter.
