Oh my God... I'm sitting here enjoying my biscuits and suddenly I realize... YOU GUYS DON'T KNOW THESE BISCUITS... I bake them myself but it's something traditionally European, specifically from the region of the Netherlands, Germany, Belgium, and, to a lesser extent, France. Anyway, it's called Speculaas or Speculoos, and Google translates it to spiced Biscuit. Here's a traditional recipe for you guys to try out. This is my nr 1 go to food when feeling down, or right now when I'm quitting smoking, and it's a must-eat for anyone who's a cinnamon lover! Adapt this recipe as you like to include, for instance, but not limited to, candied ginger, candied orange, chocolate, almonds, pecan nuts, or whatever else you seem to crave that day.

Speculaas or speculoos (Dutch: Speculaas Dutch pronunciation: [speːkyˈlaːs], Flemish: speculoos, French: spéculoos French pronunciation: ​[spekylos], German: Spekulatius) is a type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas' day in the Netherlands (5 December), Belgium (6 December),[1] and around Christmas in Germany. Speculaas are thin, very crunchy, caramelized, slightly browned and, most significantly, have some image or figure (often from the traditional stories about St. Nicholas) stamped on the front side before baking; the back is flat.


(how cool does that sound? Speculacious!)

110 g butter, cool from the fridge
220 g brown sugar, maple sugar, or another caramel-like crystal form sugar (no liquid replacements like maple syrup)
220 g flour
a knife's tip of salt.
a spoonful of cinnamon* (*=powdered)
a teaspoon of ginger*
a dash of nutmeg*
a dash of coriander seed*
a dash of clove*
a dash of white pepper*
1 teaspoon baking soda
1 egg

Instructions:

Mix all the ingredients except for the butter and the egg (so everything in powder or crystal form)

Roughly mix in the butter with a fork

Now that the butter is mixed in roughly, mix it in very thoroughly with your hands.

Make a dimple in the middle, and break the egg in here.

Mix the egg up with a fork first, then start taking in more and more cookie dough mix as you go, until you have to start kneading with your hands. When it's a nicely even mass, roll it in a 2-inch thick sausage and put it in the fridge for at least an hour, but 2 to 3 is better.

When you've lost your patience, pre-heat the oven to 365°F (Yes, the amount of days in a year, for this cookie will taste good every single day of the year!).

Roll out the cookie dough on a baking sheet or on an oiled and floured shallow baking tray. It's best to keep the dough at a maximum thickness of about 2/5". A little less is better, I like to keep it at just over 1/5".

Bake the rolled out cookie in one piece for 15 minutes.

Now take out the cookie, let it cool for 1 minute, and then stamp out cookies with cookie forms or cut it in squares with a pizza cutter.

Turn the squares or cookies around, and give them another 10 minutes in the oven on the other side.

When they come out the 2nd time, put em on a tray to cool.

Eat 1 while hot, but leave the rest for later. These are best when cooled and crisp. Store in an airtight container. Eat every morning with coffee. Be happy forever...

You are now in a better place, I welcome you, I've been here all my life.
I love Spekulatius, but in the cold season only. Anyone with a slow metabolism better abstain, the calorie count on those is through the roof.

Indeed, calorie count is through the roof. I don't need to watch my weight that way, and that's a blessing with these. I'll eat them year-round, but the colder it gets, the more I'll eat them :lol:

Well, aside from the cinnamon any spice can actually be left out of the recipe without any major issues. There's really no one true speculaas cinnamon spice recipe, but they all have in common that cinnamon is the main ingredient. Some even have cinnamon as the only spice in there. But typically, good speculaas recipes have cinnamon along with between 2 to 7 other spices.

There's also speculoos however, which is basically (but not completely) speculaas with some ingredients missing. It's also a brand name speculaas cookie that's alright with coffee, and has made itself very popular, but is sadly a very poor excuse for proper speculaas. It's the industrial store-bought equivalent of granny's home cooking speculaas.

I usually like to add some almond flour and orange zest, or essential oil if I don't have zest. And I also mix buckwheat flour in my flour mix. All those things add more flavor to the cookie, and make the flavor more complex. The dough is great to test the flavor, but once all those crude flavors get a good double baking, man o man, does it make the difference. It's such a beautiful marriage of perfect crispness with perfectly soft and smooth yet untaintedly vivid flavors, melting in your mouth to take your mind away to a fireplace in a cold winter. Hmm. I think I might make some myself today as well...

I made them today.
Not too sweet, smooth and spicy.
Great texture, crispy and crumbling on the surface, just a little chewy in the middle. 

Going to brew up some tea, these seem like the perfect accompaniment to a hot beverage. 

I will definitely make speculaas again!!

I like the idea of adding almond flour. You substitute it for the white flour? at what proportions?

I don't use white flour at all really. I'm gluten-intolerant so I use a 50/50 mix of rice and buckwheat flour usually. When I add almond flour I just add it to the 50/50 mix in a 70/30 mix/almond ratio.

I also use less sugar because I'm not used to a sugary diet.

Hot beverages? Definitely!!! Perfect combo. In fact, if you go drink coffee in a restaurant here, you get a speculoos cookie with it about 20% of the time. Used to be about 70% of the time, but other cookies gained territory. It's the fault of the Speculoos company though. They should have made Speculaas instead of Speculoos. "loos" means something's missing in my language, or something's wrong. And there is definitely something wrong with Speculoos. They took a beautiful artisan cookie of yore and mass-produce a raped version of it. Good thing the old recipes are still around :yesnod:
