Corn Casserole w/ jalapeno's, an illustrated guide

This stuff is seriously one of the best side dishes ever.  Everyone that I have ever introduced to it, asked for the recipe, and has become a regular at family gatherings.  It's one of those dishes people will start requesting.  And luckily, it's fairly easy to prepare. :laugh:

It's a spicy dish, with jalapenos as the ignition source.  :heart:

Ingredients:

2 8 oz. packages of cream cheese
1 stick of butter
1 cup of milk
3 tbsp of flour
4-6 chopped jalapeno's (I used 2 unseeded and 1.5 seeded
3 can's drained corn (about a 1 lbs bag)
Salt & Pepper

The pics are of a double mixture so you know.  Also, the jalepeno's are also highly variable so you might have to experiment.  If it doesn't seem spicy enough when I bring it out of the oven, I'll add more and throw it back in the oven 5 more minutes.

Combine all the ingredients except corn, salt and pepper in a double boiler or you can just put it in a microwave (but I think the microwave makes food taste funny).  Melt them over a medium heat until it starts to thicken.



In a separate pan lay the corn out and season with salt and pepper.  I'm not sure of an exact amount, probably 1-2 teaspoons salt and a nice layer of pepper.



Once the mixture has thickened, pour it over the corn in the pan.



Mix it, and bake at 350 degrees for 30+ minutes, until bubbly and brown on edges.



Then you are in for one tasty treat.

Holy Shit!!!  I had some of that last Christmas and I couldn't get enough!  The cream cheese gets all melty and good and the jalepenos make every bite exciting.  I think I ate more of that than turkey. :bong:

The pics posted are of a double mix, but I would say it serves 10-12, or a 5-6 for a single mix.
