QUICK!!, Shitake's good for spaghetti?
    #1838670 - 08/21/03 07:53 PM (20 years, 7 months ago)

I'm cooking right now, and I bought some shitake mushrooms the other day. Are they good for spaghetti, and is there is special way that I should prepare them?

Thanks!!!

Just butter and pepper for the saute? That is how I saute portabello's.

On a side note, there was no smell when I open the pack AT ALL. After I washed them though, there was a slight, not so good odor. Is that normal?

Well, thanks for the help.

BUT, shitakes taste like poo poo!

I sauted them in butter, and tried them right before I was going to add them to the sauce.  They still had that smell while sauteing them, and it only took me one little piece to decide they weren't getting anywhere near my spaghetti.

That turned out EXCELLENT!  Actually maybe the best I have ever made.  Had a nice bottle of wine, and some good garlic bread to with it.  But maybe it only tasted so good because I was comparing it to those shitty tasting mushrooms.

 glad you didn't ruin your spagetti.  Shittakes are not that strongly flavored, and it is a different favor than most mushrooms.

i can't see them tasting like "poo poo" but i could understand how soemone could dislike the flavor. i suggest you try porcini for spaghetti. it's better suited for pasta and less likely to ce found disagreable.
