Because by the nature of them being different turntables they don't stay all in the same spot. Subtle differences will be exacerbated as the album plays. Thus it being a pretty raw and prime example of how the very foundation of minimalism works. Similar to things like Come Out by Steve Reich, but a little more grounded since it's not the exact same thing playing and overlapping for 20 minutes, but rather different songs.

I could see it if it was like Dark Side of the Moon or Hybrid Theory, but why on Earth would they do that with a POS like The White Album?

I might be missing the point, but I don't think the specific album matters so much, just that it's being played simultaneously on 100 different turntables.

It's infinitely more interesting than just listening to the White Album.

It's not great or anything, but like most other things similar to this the idea is to listen to the evolution of the sound over time. And yes, the point isn't it being the White Album, you could do it with any album obviously.
