[Help] Making Cranberry Wine
    #16512470 -

So I was following this guide here to turn cranberry juice into an alcoholic beverage. I added 2 cups of sugar + 1 red star bakery yeast packet (activated) to 2.5L of cranberry juice. Instead of balloon to cut off airflow, I used a nitrile exam glove with a hole in it. So anyways I leave it for 2 days and take it out to try a few sips. It's still bubbling from the fermentation, looks completely normal. Tastes faintly of alchohol and is sweet, about 2 mins later I dizzy and feel weird (as though I was drunk) for 10 seconds. It goes away, but I'm a bit freaked out now. I heard that pectin (which is in this specific juice) can be fermented into methanol. So now I'm wondering what risk do I have and how do I remove it if it is present. Maybe I'm doing something wrong, do you suggest I start over and if so what should I do/use.

I don't believe it's actually capable of producing enough methanol to be toxic but rather trace amounts that would only ever be dangerous if you were distilling it, the worst that it should give you is a bad hangover. I gotta say though an investment in some actual wine yeast would make a world of difference and its not that expensive. Even if you are under 21 I believe a lot of homebrew shops will sell you supplies.

I think it may have just been the C02 carbonation I inhaled when smelling it. I was just wondering if there was any possible way the pectin in this cranberry juice can somehow turn into methanol with just fermentation.

Two days isn't nearly enough time, even for bread yeast, to get a good ferment anyway.  Pectin from my understanding doesn't produce methanol, just makes your wine/cider hazy.  I agree with Riboflavin, get some better yeast and read up on brewing if you want to get more into this hobby

Yeah, one of the first things I had to get used to when I started brewing was to let things finish out, let that yeast drop before drinking it lol, then siphon off into another container. Time is necessary when brewing, the best way to cope is to have multiple things in the pipeline so that you can have kind of a rotation going.

Thanks, I'll keep this in mind and let the fermentation finish. In the meantime I'll look for some legit wine yeast.

See if there's a homebrew store near where you live.  They should have everything you need (and a few things you don't but would like to have  ).

A lot of liquor stores carry wine yeast too. I know a lot of the bigger places near me will carry all kinds of dry wine yeast and it's not much more than a dollar per pack.
