What to do with leftover turkey?

I turn my left over turkey into turkey salad kids an wife love it . Or u could boil it down in a big pot
For a few hours then debone an add noodles or dumplings or u could not add noodles an freeze the broth for later use. Just use ur imagination an good luck

My girl made like an enchilada-style casserole. layers of turkey, green sauce, corn tortillas and four cheez mix, layered like lasagna.. baked it. Pretty damn fucken good.

Vol-au-vent with fries. This is usually made with a whole soupchicken but can easily be replaced by turkey

Depending on how much you have...

- turkey
- 500 g mushrooms(champignons)
- Juice of 1 lemon
- 300g minced meat
- 1 egg yolk
- 3 tablespoons breadcrumbs
- 75 g baking butter
- 75 g flour
- Salt and pepper
- 1 stock cube (chicken/turkey)
- Dash of cream
- herbs

cut the turkey into cubes.

Cut the mushrooms into slices. Add some lemon juice and pepper and cook them in a pan

roll some small meatballs from the minced meat. I usually make regular ones and poach them in water but you could mix with breadcrumbs and egg yolks

Melt the butter in a saucepan and make a white roux with the flour and chicken broth(0,5L) (or maizena ; ). Add salt and pepper and the lemon juice and bouillon cube. Add the mushrooms, meatballs and chicken meat.

Just before serving add some cream.

If you have left over turkey, stuffing and cranberry sauce, I like to get submarine bread and make a thanksgiving left over sandwich with those 3 things. Its tasty as hell.

Slice, shred it up, sautee onions, chili peppers, minced garlic, add turkey, pour in some tomato sauce, onion powder, chili powder, cumin, simmer til it's not watery, warm up some tortillas, shredded cheddar on the bottom, add your mexiturkey, shredded lettuce, sour cream, cholula hot sauce, wrap it, eat it.

I like the sandwich idea, I've done it before and it is surprisingly delicious. Next turkey leftovers, you should do what I love to do:

Turkey Pot Pie, yummy. I shredd and de-bone leftover turkey set in fridge. You can either use cream of mushroom or cream of chicken, I prefer cream of mushroom. Mix it with about half the milk than the condensed soup calls for so it won't be so runny when you dish it, heat and mix it. Chill the soup beforehand. Cook an onion, some celery, some cut carrots and some peas, sort of boil(small amount of water) the onion, celery and carrot until carrot is easy to cut, then cook the water out add a lil oil and saute until onion is slightly caramelized.  Mix all the veggies(including peas) and turkey into the soup, set aside. Get large pan, like cake pan and fill with pot pie mix. Unroll 2 pie crusts lay on top, take leftover crust and cut out whatever designs and lay on top of crust in pan. Bake until crust is golden brown. Easy and Satisfying recipe. You can tweak it to your tastes as far as seasoning goes just be sure to taste turkey-veggie mix for salt/pepper cause once baked there is no going back.
