You can eat fresh ones, provided you are 100% sure it's what you think it is.

If you're sure of what kind it is (and it's edible, of course) then cook and eat it. Unless you specifically know that it can be eaten raw you should assume it cannot. Generally, the Toxicology group for NAMA recommends that no mushrooms ever be eaten raw. Drying is a good method for preserving some mushrooms, but for others it can be a very bad choice.

Be very sure of what you've found before you eat it. The most common reason for mushroom poisoning is misidentification. If in doubt, throw it out. You can die if you eat the wrong mushroom, and death by mushroom poisoning is way down on my list - it will typically take a week or more.

Happy mushrooming!

Good point, blaze2.

I've heard rumors that heat destroys psilocybin and psilocin also. But my Merck Index says that psilocybin melts at 185-195 degrees Celcius (after recrystallization from methanol) and psilocin melts at 173-176 degrees Celcius (also after methanol recrystallization). Both of those temperatures are well above any anybody should use for most cooking, and neither reference mentions decomposition (which would be something they would specifically note). My conclusion is that heat (at least at the temperatures used for cooking) is not harmful to these chemicals.

On the other hand, I have also never heard of anybody cooking their psychedelic mushrooms before eating them. While I do hear reports of nausea and occasional vomiting after eating them, I would conclude that they are probably not much of a problem when eaten raw. Cooking might reduce the nausea some people experience. It would be an interesting experiment if somebody who experiences nausea were to try it and see if it helps.

Morels definitely need to be cooked before being eaten, as do many edible mushrooms. There are lots of reports of poisonings caused by uncooked or undercooked morels.

Thanks for bringing it up, blaze2.

Happy mushrooming!
