Lookin for a mac n cheese or cheese soup recipe..

I am searching for a good/real mac n cheese casserole sorta recipe.  Sprinkle some bread crumbs on the top and toast em up ya know?

Also i'm hoping to find a great broccoli, cauliflower and cheese soup.  I tried making this once before but while i was  choking it down..it just felt too much like i was eating.. . a full on cheese soup, bleh.

note i am a soul/stomach cook so amounts are loose.

mac'n'cheese:

1LB raw shrimp (prefer non farm raised but cost>quality sometimes)
4-8 strips of bacon (depends on how much you like)
1/2 a box of large shell noodles
1/2 a box of small whole grain shell noodles(get whatever you like)
1 red bell pepper
1/2 a bunch of scallions(green onions)
2 med/large shallots
4-6 cloves of garlic-minced
1/4 stick butter
about 1 cup of white wine, either pinot grigio or sauvignon blanc
1/3 cup heavy whipping cream

now the fun part, cheese!
1 cup shredded sharp chedder
1 cup shredded pepper jack
1 cup shredded parmesan
1 cup whatever you like, smoked gouda is yummy
about 1/2 cup of bread crumbs(i make out of left over(stale) bread)

salt and boil water, once boiling add noodles

saute shrimp after peeling, once about 1/2way done add bacon (cut into smaller 1/4" pieces first)

once the shrimp/bacon is nearing completion add garlic, shallots, red bell pepper... around this time the noodles will need to be drained.

deglaze the pan with the wine, once it reduces to just a little bit add the cream, stir well.

layer noodles then about 1/3 of the shrimp mixture then cheese, repeat, repeat, finish with sprinkling the bread crumbs ontop the last layer of cheese.

bake for about 25 minutes @ 325-350, the top will have a nice crust like texture.

let sit for about 5 minutes to reduce chance of burning mouth, and enjoy.

baked macaroni & cheese

1/2 box macaroni (I use Cavatappi (corkscrew pasta))
ham steak cubed

1/4lbs butter
onion
1/2tsp salt
1/2tsp pepper
1/4c flour
1 3/4c milk
1/2lbs cheese (american works best but any should work)

cook pasta according to package
combine butter, onion, salt + pepper over low heat until onion is tender
blend in flour until smooth and bubbly
remove from heat
stir in milk
bring to boil stir in cheese until melted

put macaroni in ungreased casserole dish
add ham and mix
pour cheese sauce over macaroni (mix if sauce doesn't cover on own)
top with bread crumbs
bake uncovered at 375* for 30min
