Wild yeasts

I've been thinking of making a mead/tej type beverage. I have store bought yeast but I want to do a batch using Wild yeasts.

I'm going to leave the gallon jar open at the top and stir very frequently. (recommend otherwise?)

Anyone know if certain areas of a house have more desirable yeasts in the atmosphere than others. Cabinets v. top of fridge.
What about outside v. inside?  (night temps might not be good fro the process)
