Just had my first REAL sushi roll.

I hit up the local sushi place for a quick lunch after work and decided to start off with some octopus and some eel and chatted up the chef about some of his more oddball concoctions and he suggested a roll that he makes with eel, tuna, caviar, seaweed, avacado, and some different sauces, so I obliged.  This was hands down the best meal I've eaten in months.  He was talking about how it's structured so each taste comes through as you eat it, and he wasn't freakin kidding.  This was so succulent and savory, my mouth is tingling just thinking about it again, even though I'm stuffed.  The fish eggs were completely new to me but I'm glad I tried it.  The presentation was amazing, looks like it came from a gourmet restaurant (not that I'd know what that's like).

If anyone's squeamish when it comes to this kind of thing I urge you to get out there and sample some sushi from a sushi bar.  There's nothing like it!  :drooling:

I shitty roll made with shitty fish and shitty rice.

There is a MASSIVE.. astronomical difference between good high quality sushi, and shitty mediocre sushi.

When I moved from Hawaii I was so depressed at all these fake fucking sushi rolls that were being passed around as REAL sushi. :crankdre:

Not the freshest, highest quality ingredients, for starters.

And the way it is prepared comes secondary.

But ya, good sushi is all about the freshest ingredients, prepared perfectly.

Inferior sushi may use not very fresh fish, maybe they cut the fish the wrong way, cook the rice wrong, maybe they roll it wrong.. there are a number of factors that separates high quality sushi from the rest.

I used to hit a place called McKennons in atlanta pretty
regularly, they were a creole establishment but they decided
to install a sushi bar, it seemed to have worked for them though
anyway the sushi chef and I got to know each other pretty well, he
was always bringing me something new to try because I was
adventurous and honest when it came to food, usually if I liked it
a lot it was on the menu the next day

Yeah I told him to give me the (what some consider to be) weirdest dish he had that that was it.  He was very knowledgeable about what he was serving too; I asked a question and was responded to with a paragraph. :lol:

For the others, fake sushi isn't really fake, it's just the quality.  I used to go to the supermarket and pick up a pack of pre-rolled sushi (that comes with the packet of soy sauce, chopsticks, etc) and there's just a huge difference.  The rice, when fresh, holds together better and takes on a better texture, as does the fish, veggies, and whatnot.  He suggested next time I stop in to order the sashimi (raw fish over a little rice ball) just to figure out what fish I like, sort of taste it out then use that fish to make the actual roll.  The roll itself is like 2-3 times fatter than just regular sushi.

When it was all cut up it was served to me in a +, 4 big pieces cut in half (so 8 total) and he drizzled the fish eggs and some other dressings over top of it..    Really good stuff.  I'm definitely making sushi a more regular part of my diet.

You should try some nigiri sushi. Just straight up a peice of fish on rice. Delicious yo. If you want some odd ones, go for squid, octopus, sea urchin, and my favorite: mackerel.

What was the name of the roll? Was it a volcano roll or something? Sounds like something like that, with the tuna, eel, roe and different sauces

My favorite nigiri is by far... yellowtail... with toro a close second.

He called it E and T.  Like two people's names, like Evan and Tracy...  I guess that's how they name it there..  all of their specials were named like that.  It was such a complex taste.  I'm digging the octopus and eel nigiri too.  It has a nice texture.

Ah yeah.. different sushi places tend to give different names to their special rolls.. although they may be the same ingredients as a roll somewhere else with a different name.. makes it confusing sometimes!

We used to invent our own rolls all the time when I worked at a sushi bar. One of my favorites we developed, was tuna and crab, avocado, jalepeno peppers soaked in lime juice, cream cheese, and spicy salmon on top. :drooling:
