yeah, the lighting in the kitchen plus the camera was a little much, I later added a darker caramel made of just black sugar and coconut milk (like for bibingka) and made a circle of the tapioca in the middle of the the plate rather than spreading it out. I also wrapped the pineapple chips in isomalt for a nice contrast. Sold a lot tonight and got a lot of great praise from the members (one even wanted to meet me!) The tapioca I used is "pearls du japon"

salamat

pineapple involtini

500g glucose
1000gwater
1000gsugar

2 split vanilla beans
zest of 3 lemons

stir together and boil, preferably one day before use. strain before using through a chinois.

Slice the peeled pineapple crosswise as thinly as possible (use a meat slicer or mandolin for optimal results). Lay slices overlpapping out on a half hotel pan and pour over the syrup to just cover all of the pineapple, leave for at least 24 hours before use.

bananas
split vanilla bean
black (or brown) sugar
whole butter
dark rum

peel bananas and roast with rest of ingredients (use your taste with amounts) uncovered at 420F until well cooked and little juice remains in bottom of pan. remove and cool slightly, place contents into blender, deglaze hot pan with a little rum and add sugar fond to blender contents (if fond particles are black do not incorporate) blend until completely smooth incorporating as little liquid as possible, add a little whole butter towards the end of blending.

lay two slices of pineapple (drained of syrup but still kept damp) overlapping each other, pipe a small tube of banana puree and using a knife or spatula carefully lift the edges of the pineapple and begin rolling (like a big doobie). before serving sprinkle a little white sugar on top and caramelize with a blow torch.

now i have a question: i've been looking at these great looking desserts you've been posting up, and i mean it, they do look great. but isn't it kind of flashy? i mean, i'm sure it tastes great too (so why am i bitching? lol), but i can't see my self eating something so nice looking, it's like destroying artwork.

I work at a private club, but five star restaurants are nothing new to me. Rest assure that anything I make must taste good first then look good second. It's a fine line between balancing the two, especially with desserts where people expect something dazzling.

and yes, I get the most overtime pay in the kitchen because of the tedious labor and preparation it takes. Usually it takes me two days to fully prepare a dessert and have it ready to sell on the menu. Most of my desserts run at $10-15

The beauty of food like this is that IT IS temporary artwork. The most "hand made" yet fleeting moment in time.
