colinization help

here is the deal i have EQ 12 cakes colinizing. i have maybe 4 jars over 75% colinized, 3 jars between 75%-50 and the others are fallowing along but not as fast maybe 50%-10% colinized. on the edges of the colinization its fluffy and creeping through the cake, goody. is it bad to see the older colinized parts not fluffy and just white? whats the fluffy part called? do i need the bottom part of the cake to clolinize before birth? the jars have alot of moisture in them. in one jar i actuly had a drop of water slide down the inside of the jar. it looks as if it is not helping the colinization (too wet). think i have too much moisture in them? what should i do to fix it? i plan to stick the jars in the frige overnight before i try to birth them. should i wait for all the jars to colinize? and how long should it be before i see pins then shrooms. from what i understand the colinization part is the easiest. can any one please direct me to some links or some thing that is detailed in the post coliniztion through the harvest. i can keep my grow chamber at 90% humidity 80 f so as long as i keep the air circulating i should be all good right?

The fluffy part is the mycelium. It is called "tometose" if it is cottony and "rhizomorphic" if it looks like roots or the edge of a feather. The mycelium normally becomes a solid white with time. It is good to let the mycelium continue to harden after 100% colinization so I would not bother to refrigerate the early colonizers. If you can't wait for all of the jars to colonize, you can empty the jars and scrape off the uncolonized parts.
