    #4208666 - 05/22/05 11:59 PM (18 years, 10 months ago)

ya so my friend and i are going hiking upstate ny... we wanted to bring lunch to eat w/ us while hiking instead of going back to the car. but we'll be doing a lot of bouldering so i don't wanna carry too much. besides a PB&J sandwich... what is non-perishable and yummy?

hey man...i just got back from some camping in the catskills this weekend. among a billion other things to recomend we brought some of this dish i been makin lately that i just ran into and am in love with. i posted the directions in another thread and will paste it here.
all the kids i was camping with ate it down in no time! its a taste that takes geting used to but it sticks to ur ribs and the whole nine. MMMMM MMM GOOD. kept us good for the whole weekend, and u serve it cold and it stays for a good couple days before getin just mushy. if the sun is blazin i wouldnt suggest however still tastes great even if it gets mushy and or a lil hot for a lil bit! its not a 123 to whip together but easy enuff. it dont take much of it to fill u up so even just rockin out with a small tupperware container should do.
aside from that id suggest nuts and granola and whatnot. hehe.

me and my girl made this the other night. ive always loved it! and its no fail. u follow these simple directions and ur sure to have a delicious meal!

Cold Noodles with Thai Peanut Sauce!
Ingredients-
1 pound spaghetti...i prefer like flat wide noodles like fettucini.
4 tablespoons sesame oil
1/2 cup of natural style peanut butter
1/3 cup soy sauce
3 tablespoons chinese rice wine or sherry
1 tablespoon water
1 and 1/2 tablespoon rice vinegar or other vinegar
1 tablespoon vegetable oil
1 tablespoon firmly packed light brown sugar
3 garlic cloves minced
1 teaspoon fresh ginger minced
1/2 teaspoon crushed red pepper flakes (more or less to taste)
1 cucumber peeled, cut , seeded, cut to style u like
4 scallions thinly sliced

1) cook spaghetti al dente. drain, rinse under cold water. Toss noodles with 2 tablespoons sesame oil. cover and chill untill ready to combine with peanut sauce. to chill faster take bowl of spaghetti and place in lager bowl with ice water.
2) to make sauce combine remaining 2 tablespoons of sesame oil with all other ingredients EXCEPT THE CUCUMBER AND SCALLIONS. beat untill well mixed. doesnt look like it might mix at first but it will soak into itself nicely eventualy. let cool. if feeding then and there repeat cooling method with larger bowl of ice water. should be a matter of minutes before each is cold enough to serve. dont cool the sauce too long as it will be hard to mix in the speghetti. might not be necesary to cool the sauce so long as the speghetti is cold enough. just tastes better cold i think.
3) just before serving toss noodles with sauce and mix in well. add the cucumbers and the chopped part of scallions n mix. u only need to chop the bottom half of the scallions for the most part as the top half is not needed.

this is a delicious dish if u ask me and im psyched on bustin it out this summer at bbqs, shows, and whatever. personally, when we made it, i could have done with more cucumbers and more scallions for substance. at least more cucumnbers. thats just me though. if anyone trys this let me know how it turned out and if u liked!

Yeah, definitely some nuts, they are quite dense nutritionally and since they are so dry, bring lots of water(heavy I know). Bring some kind of hard candy too, you won't get as thirsty while eating it. Although you do need to drink plenty of water anyway.
