I can't really suggest anything other than those mentioned. I will back up any spaghetti western Leone did and certainly the stuff with Eastwood. Leone's direction brought out the best elements of Eastwood's early talent. as mentioned before, you can't go wrong with Ennio Morricone's scores. epic? fuck yes.
I had a compilation of his work and would listen to that over and over. I had almost my entire dorm hall humming/whistling the theme to The Good, the Bad and the Ugly.

basically an American Western type film directed by an Italian or Spanish director, although usually Italian. they were typically shot in Europe due to financial issues with international casts. the ones that became famous, which are typically the best and most epic, were directed by Sergio Leone (Italian) and starred Clint Eastwood and other Americans in the lead roles with mostly Italian supporting casts. basically.
the best spaghetti westerns have been mentioned in this thread:
Il Buono, il brutto, il cattivo (The Good, the Bad and the Ugly)
C'era una volta il West (Once Upon a Time in the West)
Per qualche dollaro in pi? (For a Few Dollars More)
Per un pugno di dollari (A Fistful of Dollars)
(all directed by Leone I might note)
for a current (French) Western (again with a mostly American cast), check out Blueberry based on the comics. it's in the same vein and pretty good but not nearly as classic/essential as the films mentioned previously. p.s. it really helps to be familiar with the comics (to which the movie isn't very faithful) and might be confusing if not. still worth checking out I guess.

Basically, any western directed by Sergio Leone, an Italian director who started Clint Eastwood's career with his many films freaturing Eastwood. If you look closely, you'll notice that many of his early films were shot on location in Spain and Italy....
