Hey guys, trying to contribute to the community after a hiatus, so I thought I would start this niche thread for my fellow bread heads and anyone interested in learning more about the joys of bread baking.

This thread is for posting recipes, asking questions, reccomendindations and sharing your lovely loafs!

THE ONLY REQUIREMENT FOR ENTRY: please post your favorite type of bread to bake and/or eat.

Me first! My specialty is focaccia bread and my favorite snack bread is beer bread.

How much salt is a good baseline for most recipes? I've been having issues with over salting using the recommended amounts in the last few recipes I've tried…

Regular rustic bread loaf baked in a clay bowl.

I’ve made Hawaiian bread that was a hit but I feel could be better. It calls for real pineapple juice and the gnats go bonkers for it in the warm months while it rises.

I salt the bread at or below what is called for. Otherwise I salt after I butter it. Good luck!

No-Knead Bread ftw. I usually add extra oil to the dough, and sometimes maybe some yogurt in place of part of the water, because it does tend to dry out quickly. Add whatever spices, mix it up. I like poppy seed, fennel, and sesame seed… maybe some onion flakes too. Everything-bagel up that shit. However, no matter what it is always delicious, even more so if you forget about it in the fridge for a few days before baking.

Also, Amish potato bread rolls are great, especially for Thanksgiving.

If we’re talking American style biscuits, Smitten Kitchen’s cream biscuits should be illegal they’re so good. Great for a cheese and charcuterie plate with jam to fancy it up.

Awesome idea for a thread! I've never baked bread proper, but I do have a good amount of experience with other baked goods. I have had the invasive "BUT WHAT ABOUT BREAD THOUGH" thoughts in my head once or twice, however, hah.

As for my answer, I love to eat rye bread. So it'd be a toss up between that and this type of roll/bun that I ate a lot while studying.

No-Knead bread is a super easy gateway bread. Once you’re familiar with it, you could even replace part of the white flour with rye and add molasses and caraway seeds if you like. It’s very customizable.

Hmmm... That sounds like I should definitely check it out! Maybe after the holiday barrage of cooking and roasts dies down. Thank you! (Actually went and read through J.  Kenji Lopéz Alt's recipe per your earlier post... And I'm even more excited to try than when I began typing this post! :grin:

It’s seriously so quick and easy, it’s the bread equivalent of showing up to a party in an expensive cocktail dress and replying to compliments with a blithe “oh, this old rag?”… and kind of meaning it.

I used to make it when I was in art school with a 60-70 hour/week course load. It does really need a cast iron Dutch oven, but the actual hands-on work in total is less than 15 minutes.

Can't argue with the results! And I do happen to have a Cast Iron Dutch Oven lying about. Been a minute since I've had a good reason to use it, but bread is an excellent reason :smile:

Come to think of it... I can rope it in with my Xmas celebrations... have it ready to eat circa NYE. Plus, can't beat fresh bread and leftovers! I'll take pictures as I go and post them then.

I love my breads, and I'm actually just finished figuring out how to re-create the cinnamon rolls of my youth. Having nailed that, I have a lot of bread flour and yeast leftover so I'm looking at bagels or French bread next. My first challah, here.
