Eggplant Parmesan a la’ Penguin


1 eggplant, sliced and lighty salted
Tomatoes, sliced or you can use crused tomatoes in a can. I recommend
Onions, diced
Garlic, use powdered or garlic cloves
Bread crumbs
Cheese (optional)
Egg whites, 3.
Flour.
Basil, fresh or dried.

REAL EASY!

Take the sliced eggplant and lightly flour it; then use beaten egg whites to coat and then dredge in bread crumbs. Fry ( I use PAM or any non-stick spray ) until they are browned.

Place in a baking dish, layered,  and top with tomatoes basil and salt and pepper.

Place in a 400-degree oven for 10 minutes…while this is cooking diced your onion.

Take out the eggplant slices and place onion and the garlic on top. Lower the oven temp to 375 and cook for 10 minutes more.

Take out once again and top with cheese ( I recommend a parmesan cheese but any will work according to preference). Place back in oven now for 5 minutes at 450 or until cheese is melted.

Take out immediately! Let cool and enjoy!

OF COURSE: you can add fennel greens to this at the end instead of cheese; broccoli  and spinich due great as well. Serve the eggplant over really dry toast or by itself.

Eggplant Parmesan is the shit..
though I prefer layering it with those ready-made lasagna strips.
