White Bean and Kale Soup new! improved!

It's amazing how adding a couple of random impromtu ingredients can either make or break your dish.  In this case it MADE this soup the best soup I've ever concocted.

1/2 BACON (do i have your attention???!!!)
2 cans white beans, strained
4 cups chicken stock
Bunch fresh kale leaves, ripped into bite size pieces
1/2 yellow onion, chopped
1 clove garlic, minced
1-2 tbsp finely chopped fresh rosemary leaves
Parmesan cheese rinds coarsely chopped

In a big pot, over low-med heat sautee the bacon until crispy then remove with a slotted spoon and set aside.

Now, normally I would just add the onions here and satuee until tender in the bacon fat.  I had some too old for drinking white wine* in the fridge so I decided to deglaze the bottom of the pot before adding the onions.  I also threw in 2 tbsp of unsalted butter, why not?  I know I know, probably overkill what with all the bacon fat, but I couldn't resist.  When I could smell the alcohol starting to cook off I added the onions, and sauteed them til tender, then added the garlic and rosemary and let that sautee for a few minutes. 

Add the beans and chicken stock to this and bring to a boil.  Reduce heat and let simmer until the beans are tender and the soup texture is to your liking.  Then add the parmesan cheese rinds (this will give your soup a creamier texture, and a nutty, salty kick) and the kale leaves, allowing them to wilt in the hot liquid.  Finally, mix in the bacon pieces you set aside earlier.

Ya know, you read all these culinary poohbahs telling you not to use any wine you wouldn't drink in a recipe but I have found that dumping a half bottle in of even week old or just plain not so good wine will enhance most any recipe.  As long as it isn't vinegar, of course.  Some wine in the cooking is almost always an improvment over no wine.

yeah, i mean, as long as it was once drinkable i think once the alcohol cooks off all the good sweetness is still there.

omg this soup turned out so delish.  i usually add lemon zest at the end to brighten it up but the flavors all came together so perfectly, it didn't need any.

Mmmmm that sound good, Ima give that a go for sure. Probably use silverbeet in place of the kale. Ive got tons of that stuff atm

i have had it (yum!) but never cooked with it.  i really aspire to branch out in terms of the greens/veggies i work with....someday....
