Cinnamon?
    #10150620 -

My friend is a spice fiend and manages to get really high quality spices.  Anyways he gave me some cinnamon; he gave me some talk about how its the best available and some jazz, it tastes fine though to me it tastes only slightly more interesting than cinnamon I could buy at a store.

Does anyone have any recipes that use cinnamon in a savory dish?  I know some middle eastern food uses cinnamon, I would love to try some out.

Moussaka, Mole... I don't know, that's all I got.

Do you know what kind of cinnamon it is? There are two main types Cassia (which isn't "cinnamon" at all)which is what you usually find in most supermarkets (hard double rolled stick) and "True" cinnamon or Canela which is soft and brittle single rolled. I get my spices from Penzeys (mail order, but luckily I live near one of the few retail locations they operate)

Sometimes I like to throw some cinnamon on chicken breast as it roasts, no specific recipe though.

mmm.

cinnamon is one of my favourite spices.
you can use cinnamon in curries, as well as many meat dishes.
here is a recipe for an orange cinnamon glaze for ham.

-1 1/2 cups no pulp orange juice
-1/4 cup brown sugar
-2 tbsp whole cloves
-2 tbsp cinnamon
-4 tbsp boiling water
-3 tbsp honey

-combine water, honey, brown sugar, cloves and cinnamon in a small sauce pan on medium heat.
-Bring to a scald and remove from heat
-Stir in orange juice and return to heat.
-boil stirring frequently.
-serve immediately on ham, duck or pork.

Ill try that recipe out, sounds good.  I think it is probably actual cinnamon but beyond that I dont know much about it.  All I can say is that the flavor is more complex than your average cinnamon.  I think Im going to try out a mole sauce, and maybe some kind of chicken rub with cinnamon and chile powders.

Try it in a tomato pasta sauce.  Maybe a little nutmeg too...  It'll blow your mind.
