One can use any kind (well not really ANY) of jars.

But maybe I get your question wrong.

Those Le Parfait looks OK. A bit too expensive for my taste though. I reuse used mayonaise, peanutbutter, pickles jars, etc.

There are threads and a "lip" under the threads on the jar. With the lid on it turns until it's resting on that lip.

I've never seen this in actives, but my Lion's Mane will do this when the humidity level is too high compared to the fae.  Same pink color and soft flesh.

I don't eat them, even cooked.  Because I assume they have a high bacterial load.

Here's a list of other indicators such as smell etc that can help you decide what to do with them.  I would personally harvest and compost the first flush (or at least the mushy pink ones).  Adjust environmental conditions for the second.  But you also might want to wait for a second opinion.  I don't really grow cubes anymore and maybe someone else will have better insight.
