I think traditionally the onions are thinly sliced, which through cooking softens them up so they don't exactly keep a perfect circle...but it's cool that you guys are just goin for it however you want! that's how everyone should cook - just roll it out however you see fit

If I were to have a special someone over I'd probably opt for the slicing since it looks a bit more refined, though...

Made my Shroomy Onion soup variation, but neglected to note that my digicam needed to charge prior to use.  Soup was delicious!

I didn't use the flour, because I wanted a brothy soup.  I used shiitakes rather than criminis...yum!  Rather than chicken broth, I used Better Than Bouillon Mushroom soup base & filtered water.

Here's my crock pot version:

butter & minced onion in crock pot on high for 2 hours (Went for a hike)

Add soup base, water, mushrooms & cook on high for another 2 hours
(Cleaned house)

Done!

I have to say that it was pretty good but it felt like something was missing. I think next time I'll have to let the onions get browner and more caramelized. I always get impatient with onions!
Also, I used beef stock cubes which I bought from a convenience store, so that may have affected the taste too.
I have one or two pics which I'll post when I can find my cable.
Definitely going to be cooking onion soup again and tweaking it until it reaches perfection!

what's missing is SHERRY... this is the real secret to making onion soup.

yeah I was looking at recipes for French onion soup the other day and it called for sherry among other things such as a bay leaf and thyme.
Right now I don't have any spices/herbs in my house, so I'm gonna have to wait awhile until I can kick my meals up a notch.

a good sized splash to deglaze the pan, after the onions are caramelized. the better the sherry, the more you can use- the cheap stuff will give your final product an off flavor.

but seriously- a decent bottle of sherry from the liquor store might be about $12-15 (get dry sherry, not cream), and this will stay good refrigerated for over a year. the bite, richness, and slight sweetness it gives can't be substituted (except maybe with a dry white wine).

also, sherry can be used to make salad dressings (use sparingly), meat/ seafood marinades, and pan sauces. good sherry can double for xiaoxing wine when cooking chinese food also.
