You're a great member of this community.  I like your avatar as well.

Don't let THE_LOAF/hamloaf/liquidmyce (or whatever he changes his name to next) get to you, he will get his, we still have our 5 mushroom rating anyway because we're awesome; lol.

I love your avatar.

You give really good advice, and I really like the stop-motion video you did of your cake grow.  Noticing the water droplets swirl in the FAE was really astute.

know your starch
11/19/13 03:31 PM

I wish i had known about the word geletanization. I had to learn about rice from angry Japanese people and while effective it left the vocabulary somewhat incomplete.

urthtown responded on 11/21/13 08:26 AM:

That sounds... unpleasant  Thanks for the rating! It's really important for brewing if you want to add grains that haven't been malted. The germination process breaks down the starch sufficiently for enzymes to further process it into sugar, but hard, raw starches need that gelatinization in order for you to achieve good starch conversion to mono and disaccharides. I'm such a mycology noob but I have a background as a commercial cook, an avid home brewer and education in biology/natural sciences so a lot of the info on here feels like it's filling in blanks and makes a lot of sense given the rest of the information I have kicking around in this ol' head!
