Thanks for the rating! It's really important for brewing if you want to add grains that haven't been malted. The germination process breaks down the starch sufficiently for enzymes to further process it into sugar, but hard, raw starches need that gelatinization in order for you to achieve good starch conversion to mono and disaccharides. I'm such a mycology noob but I have a background as a commercial cook, an avid home brewer and education in biology/natural sciences so a lot of the info on here feels like it's filling in blanks and makes a lot of sense given the rest of the information I have kicking around in this ol' head!
