So I must suck at pressure cooking or something... I have a 23 qt Presto and I ALWAYS get insane condensation on my pp5s. I tried not wrapping them in foil once and half of them got ruined to water rolling over the agar. I know I'm supposed to "bring the pressure up/down slowly" but HOW exactly do I do this. My method is put the lid on the PC, turn the burner on high and wait for steam to start coming out. Then I wait a few more minutes, add the pressure rocker and turn the heat to just below medium (4/10). PC 35 minutes, then turn the heat to 2/10 for 10-15 more minutes. At 45 minutes I turn the burner completely off and leave the PC on the burner overnight. Does anyone see any major flaws in my technique? PS, I've read you can wash and re-use these pp5 containers. Can I still do this if they have major contam growing or should I just toss them?
