Once insulin resistance (IR) is achieved, blood insulin, blood glucose, and blood pressure are all increased. Through complex pathways, these conditions directly or indirectly contribute to heart disease. IR also leads to atherogenic dyslipidemia, characterized by high levels of oxidized LDL (oxLDL)cholesterol, low levels of HDL cholesterol, and elevated triglycerides in the blood, each of which contribute to heart disease as well. Of particular interest is oxLDL. This is what initiates atherosclerosis and building of arterial plaque. OxLDL exists in relatively small amounts in nature and is identified and readily destroyed by immune cells. OxLDL is introduced to the body in massive amounts when commercially fried foods, or foods fried in vegetable oil, are consumed. Vegetable oils are comprised of polyunsaturated fatty acids, which are structurally unstable compared to saturated fats (animal fats). When exposed to oxygen or heat, they break down to form toxic byproducts called free radicals. A large influx of free radicals into the body results in the damaging of normal LDL cholesterol in particular, inhibiting its normal function and turning it into an atherosclerosis-promoting molecule. As oxLDL adheres to the arterial walls, white blood cells mistake the damaged molecule for bacteria and attack it, compounding the accumulation of mass in the artery. It seems then, that fast food is the perfect combination of ingredients conducive to heart disease and diabetes.
