3lbs of boneless/skinless chicken breast 8 cherry peppers 1/4th white onion used bertolli pasta, spinach noodle stuffed with garlic / parmesgan 1 jar of bertolli sundried tomato alfredo 2lbs of fresh portabello cut longways.
fork holes into the chicken, marinade in your choice of italian dressing, i used Newmans Own, of course.
grille the chicken just undercooked, be sure to 45* the chicken to get diamond grille marks.
Grille the peppers along with the chicken, the peppers have no spice heat, just lovely sweet pepper flavor.
put your portabello and onion in a pan to sautee, a touch of butter, tbsp of olive oil, dash of salt, garlic powder and pepper.
prepare the pasta as pkg says.
side cut the chicken breasts, then go down the center with a clean cut to cut into bite sized peices, cut the peppers in the same manner, lightly mince.
Add the peppers, chicken, mushrooms, onion all together in pan, and sautee just a bit longer, add half of the bertolli sauce. Stir together,
drain pasta and pour into large pasta serving dish, add the pan of sauteed items, toss together, drizzle with olive oil, and parmesgan.
Total cook time, 15mins, 10 mins of prep.
end result:

quick and easy, and a good suprise from the portabello and the peppers,
impress your friends with a good dish, especially if you usually offer cold pizza, ramen noodle, or cereal w/o milk.
costs around 12 dollars to make enough for 6 people.

Thanks!!
yeah my wife loves this dish, i cooked it for her a few times when we were just "hanging out" now two years later we gots a little family going on, the dish..lol it's versatile and she can tell me to use any meat she wants at the moment. My favorite meat to use in it is tenderloin, hers bison, i like lamb also, and even rabbit.
the only thing that's been nasty in it so far has been sweet italian sausage.. WAY to greesy with all the cheeses.
