Candy caps question

Is there a certain way to dry candy caps so they retain their maple syrup smell? I just dehydrated a few pounds and some came out with faint syrup smell but mostly just smelled like burnt mushrooms.
The dehydrator is the same I use for all mushrooms with a permanent temp of 140f

I’ve always just used my regular dehydrator. They’ve always smelled like butterscotch to me. The smell in the house is amazing.
The closet I keep my backpack and mushroom bags in still smells like candy caps from this year.
Maybe you got some that aren’t super fragrant?
Once jarred for storage, maybe they will regain the smell?
I usually grind them into powder then jar with desiccant for baking later.

Yeah maybe that's the case. I am in western Washington. But I've definitely heard of people that collect here that have had to throw away bags and gloves from picking because the smell was too intense.
What temp is your dehydrator running at?
Maybe 140 is too hot? Or I ran it too long resulting in the fragrance being cooked out, idk. This is my first experience trying to use these.
I got those few pounds in a couple hours yesterday. I'ma go back tomorrow and grab more to try again. I will try drying them slowly over a longer period of time.

My dehydrator runs around 155ish I usually run them for around 24 hrs like the rest of my mushrooms.
Good luck man. They are really great.
I have noticed that sometimes if they have dried a bit before harvest they smell even stronger. So maybe staring slow is a good idea?

Just making sure I don't have a different laccaria species. They bleed white when cut on the gills.



I just smelled my mushroom bag from yesterday and it smells a lot more like maple then the dried mushrooms. Weird
I read something elsewhere that said to dry them out slowly. So I'll try that.

Try Heat Lamp/Incandescent Lamp drying. Its the old way i used to dry shrooms. Should be gentle enough to preserve the taste.
