So, a while back i made an induction coil for my scalpel. I found the heating was far more effecent than resistance heating, like a bactocineratior or a traditional electric cooktop.
So i went and got an induction presto and a commercial induction cook top that has a built in timer and temp control.
 Some reasons as to why this is more effecent. You heat the desired surface directly using eddy currents, you arent transfering heat into it through an element. You can also set the temp allowing very minimal power draw after it has hit pressure.

The regular retail induction cooktops are not powerful enough to heat my 24 quart pot to a boil. The regular resistance cooktop are though. Just barely.
This commercial one probably works better though.

What kind of time(s) does it take to heat up vent and get to pressure?
Can you show your induction scalpel sterilizer? Sounds intriguing

@Noob: what power level did you find insufficient? My cooktop (2000 watt max with one burner on) is a beast, and I turn it down to 30% power once the PC gets up to temp. 2000 watts is about 7000 btu/hr, which makes it stronger than a typical flame range since the flame wastes more heat.
My gut estimate is that 800 watts would be very frustrating and 1100 watts would be slow but workable. 1400 watts would be solid. How much power output was the insufficient unit? And Leon, how much power is the unit you bought and like?

This is my induction sterilizer for my tools. It works with any magnetic metal

 this uses eddy currents to heat the metal directly threw the air, with no contact. it is VERY fast and with the way i have it mounted i never have to take my hands out of the sab to sterilize my scalpel, i have a footswitch for it. As for the burner, this unit is 1800w which is adequate for what we are using it for, if i was boiling a whole 24 qt pot of water, it would struggle. it heats up very quickly. I will be doing tests to find the minimal amount of water i can run it with so i can heat it up faster and use less power. this unit is 120v AC, you can get 240v ac units but i dont think thats needed for how little water we actualy have to bring to a boil.
