RAMEN TIMEZ!!



so i've recently been trying my hand at soup making, specifically, ramen. now, i haven't elevated myself to the level of making my own noodles and having the entire thing be from scratch, but this shit is turning out pretty damn good, and better every time (although the eggs are a pain to time right). not only is it delicious, but i've been making enough of the stuff to last me and my roommate a few days, so we can relax on cooking during the week and just reheat a tasty bowl of soups instead, either as a meal or as a snack! it's been awesome. but i'm a super novice. for you guys, this is good, it means you get a "how to make fancy ramen the easy way" thread.


Ingredients:
  • red chard
  • radishes (and their tasty leaves!; set some of the radish aside)
  • onions
  • mushroom
  • leeks
  • eggs
  • ramen noodles (shin raymun)
  • green onion (set some aside)
  • cilantro
  • sriracha paste
  • rice vinegar
  • chicken stock
  • chicken bouillon (optional)
  • avocado (optional)
  • serrano peppers (optional)
  • cabbage for frying (optional)



as per usual, when i make these threads, the first thing we do is collect our ingredients.




we also need to start up a pot of water, chicken stock (i also add a little chicken bouillon), and rice vinegar
and get it to boiling.




once we get that shit to a nice roiling boil, throw in your mushrooms, and then your onions and mushrooms.
let this go for a few minutes. okay, now we're going to throw in our leeks. these cook pretty fast so from this
point on we gotta be on our toes.

 


toss in your radishes and green onion. the radishes cook pretty quick, but it depends on how well done
you want them, really.

 


oh look, ramens and shrimps!




add the ramen and the shrimps to your soups. the shrimps are going to lower the overall temperature, so
now would also be the time to add your eggies--just drop them in and let it sit for a bit without fucking with
it, otherwise you'll break the yolks.

 


add flavor packet(s), and stir gently. yeah, i said it. the flavor packet in the shin raymun is amazing! also, add
some delicious sriracha paste at this point.




toss in your chard (greens!); i also included the radish greens, because, well, why the fuck not? once these
cook down, you're pretty much set.

 


distribute into bowls, and arrange as necessary. or, just plop that shit in there and eat. it doesn't really matter,
but presentation is always a plus, and something i'm still working on (in addition to not overcooking my eggs).
garnish with the radish you set aside (crunchy!), green onion, cilantro, serranos, and avocado.

then eat the fuck out of it like you mean some serious fucking business. there was also fried cabbage, but we
ate it all before i remembered to take a picture of it.






my roommate is awesome, btw. she brought me back that awesome bowl (the awesomeness of which is not
adequately represented in this thread) so we could each have our own, and the most adorable pair of chopsticks
i've ever seen! just look at how fucking cute they are. LOOK AT THEM!








and i guess i should add my first two attempts at ramen, made with a variety of ingredients.

Phase One:

i'm totally gonna have to get oyster mushrooms again the next time i make it. the store i walk past on my way
home from school doesn't carry them, unfortunately.

 


Phase Two:

SPICY!! i was so close to getting the egg right this round.

 



this can be the ramen equivalent to my omelette thread, so i will update periodically when i make ramen and
remember to take pictures. hopefully we'll get to the point of me making my own noodles and stock because
that would be fucking epic!

I prefer my ramen as a dry biscuit but your entry here has made me think that maybe I should boil them and try and eat them as noodles.

i live in avocado country, why would i not? i get them from friends with trees because this whole area used to be citrus and avocado groves.

plus they are delicious and i love making avocado fans.

Here is my take....

Ramen.

2 cups flour
2 egg yolks
~8 tbls of water
1 tbls of salt

Blend in a food processor until you get a small grain like texture.





Let the dough rest for about 30 minutes covered in the fridge.

Meanwhile the broth...
About a quart or more of water.
Teaspoon of dashi.
Stems of three leaves of napa cabbage.
One star anise
Couple of spoons full Tuong Ot Toi chili paste
1 inch sliced piece of ginger.

Bring the mixture to a simmer.

Roll out the noodles.







When the noodles are ready to go in toss the greens from the napa cabbage, 1/4 cup of miso, green onion, 1/2 pound of shrimp and in this case about 1/4 pound of fresh wood ear mushrooms into the pot.  Simmer while the noodles are cooking
The noodle get boiled until they just float.  Rinse in hot water to get rid of the starch and dish in bowls. 

Garnish with cilantro, scalions, hard boiled eggs and slices of lime.

Not nearly as pretty as yours Sloth but it was tasty.

I want to try to make ramen, but I definitely want to make my own noodles. Ramen really needs those alkaline noodles, which has no eggs, but water that is mixed with sodium carbonate or sodium hydroxide. Help keep that toothsome texture and doesn't get soft and fall apart, even after long periods of cooking.

Any idea of the ratios?  I do have sodium hydroxide, it would be interesting to try.

Fish sauce....I didn't even think of that.  May have migrated the dish closer to pho instead of ramen.  Kind of already did that though with the citrus didn't I?
