If I'm using rye berries in 1/2 pint jars, how much water should I put in the jars before placing in pressure cooker? Thanks!

Why would you want to put rye berries in 1/2 pint jars? Go with quart jars. you would use a 1:1 ratio from what I have been told.

Here are some of my observations with rye berries in QUART jars. Adjust as needed. Oss & Oeric said 160 ml rye to 130 ml water. I found this to be too dry. Then I found another source that said 200 ml rye:350 ml water. Too much! The rye was very difficult to shake; it was a big sticky clump. Then I backed down to 200 ml rye:300 ml water. This one worked pretty well. I think I saw elsewhere on the board that Anno said a 1:1 ratio.

Rye berries 1 cup : water 2/3 - 3/4 cup. I tend to use closer to 3/4 cup water. Pressure cook at 15 psi for a full 1 hour. I don't soak them overnight because I tend to get exploded berries after cooking presoaked berries, and I hate adding lime. Rye grass seed I soak overnight before pressure cooking.

Anno actually said rye/water = 10/11, but at least 1:1.

we use always use a 1:1 ratio by volume, so 1 cup of rye combined with 1 cup of water. No exploded kernels, easy shakable and as much moisture as you can get in without turning the substrate into an unshakable clump.

Ive got a question, somebody said you can go to a feed store like one that sells livestock feed in 50# sacks and get rye berries. Has anybody ever actually gotten them from there? Another thing is i kinda doubt that the feed store near us would have them in stock but might be able to order them, but the people that run the store are the type that has to know everything and would prolly ask me what i needed the rye for. Any ideas for a logical excuse? Thanks and take care.

We buy our rye from a feed store, it sells ridicilously cheap, about US$ 5 for 25 kilograms. Organically grown rye is just sooooo expensive, and we have never noticed any difference between them.

I find that when U put the water + the rye directly in the jar and cook, U get all dry rye at the top and all slogy rye at the bottom. Just cook the rye for 30-45 min until it's neerly tender, and sterilise for 30-60 min.

Doesn?t happen if you shake the jar imediately after pressure cooking.

Anno is right, shake the jars while they are still hot and don't use more water than in an 1:1 ratio (by volume).
Preboiling is ok, but a pain in the *ss when you have to do a great number of jars :wink:.
Dry rye and water are much more easier to work with than sticky boiled rye.

A simpler way of determining a correct content is to make a test batch with different amounts of water:
100g rye and
105
110
115
120
125 g water.

Skake imediately after pressure cooking,
set aside for 2 days.
The jar, in which the berries are not wet but have a moist appearance, is the one with the correct ratio.
There also shouldn?t be many exploded kernels, (perhaps 2% at most).
