morel recipes

The farmers market had some morels, so I grabbed some to go with a meal.
I have a really nice cut of prime rib that I wanted to broil that I thought they would go well with, maybe with some roasted potatoes or something.
anyone have a favorite recipe for the mushrooms that won't distract from their original flavor too much.
I was thinking simmered in butter with a dash of red wine or something, but thought I'd test your culinary meddle first....

shrimp stuffed mushrooms are great.
i made some for my mother for mother's day. she loved them.
Shrimp Stuffed Mushrooms:
1.) 6 Tbs. butter. 2.) 2/3 cups milk. 3.) 1/4 cups parmasean(sp?) cheese. 4.) 1/3 cup grated cheddar. 5.) 1 tsp. minced garlic. 6.) 1/3 cup finely chopped onion. 7.) 1/2 cup finely chopped shrimp (or your choice shellfish). 8.) 4 large potatoes 9.) 7x10 inch [or reasonably close] casserole dish. 10.) enough mushroom caps to layer in the casserole dish
Preheat oven to 350 f.
Chop potatoes, boil and drain.
Mash and beat potatoes with 3 Tbs. butter and 1/3 cups milk. spread to cover the bottom of the casserole dish.
Layer mushrooms caps [gils facing up] to cover and set aside.
in a small sauce pan combine shrimp, 3 Tbs. butter, 1/3 cups milk,parmasean cheese , garlic and onion. simmer, stirring frequently untill reduced to half volume. let cool.
once sauce is cool, spoon into mushroom caps, sprinkle cheddar and bake for 35-45 min.
enjoy, concrete.

sounds delicious, but I think I'm looking for something a little more simple, they will merely be a side dish.

Best ot keep them simple if you havent tasted them yet, that way you can get more of there own flavour, i would fry them in a little butter, with some juice from then beef, and you can't go wrong with a splash of redwine in there.

Mmmmmm, those ALL sound great ! This recipe is a main course but I suppose you could cut out the steak and just drizzle the brandy cream sauce over the shrooms as a starter.. Steak with Brandy Mushroom Sauce (For two steaks) Sauce Ingredients: 3 oz. portabello mushrooms. 3 oz. button mushrooms 3 oz. of any other wild mushrooms you care to add 2 oz. cream 3 oz. brandy 1 tbls. fresh chopped garlic 2 tbls. onion puree 1 tbls. olive oil 1 tbls. butter 1/4 tsp. coarse black pepper Instructions: Add olive oil to preheated sauce pan Add and saut? onion puree and garlic at medium high heat Add mushrooms and cook half way then add the brandy (watch out for the flames !) shortly followed by the cream and saut? until fully cooked Reduce heat, then add pepper and butter and let simmer Pour generously over sizzling steaks. Enjoy !

YUMMY! Holy shit those Shrimp Stuft Morel Mushrooms sound sooooooooo good. I'm going to order some morels right now just for that reason. eBay here I come!
