What is point of Gypsum?

I'm making a bilk sub recipe right now (3 parts coir, 1 part verm, 1 part coffee grinds and 1 part worm castings).

My question is I have gypsum...how much should i add to this? And...what is the point/benefit of adding gypsum to a bulk sub?

I was never clear on this.

Oh and I am going to pasteurize this in an oven bag in a pot of 175 deg. F water for an hour and  half....is this adequate?

Any answers/suggestions are greatly appriciated.

I believe that it serves a similar purpose to vermiculite, as it helps to provide air and water, as a "conditioner" for the substrate. Also the mushrooms use it for nutrients, and it also serves as a pH buffer I think.

10% by volume is a typical gypsum supplementation

I believe 175 is borderline "too hot". 150 and 160 have been used successfully. 180 will cause a bacterial bloom, or so i've read

Gypsum adds sulfur and calcium, which are two major nutrients mushrooms need. It also helps prevent pH swings.

From what i understand, gypsum provides the nutrients sulfur and calcium (I think) to help your mushrooms grow more and bigger.  In cakes you put in 1 tablespoon to 5 jars, ie 1tbs:2.5pts substrate.

Absolutely not.  The center of your substrate will still be barely above room temperature after that amount of time.  You'll need to stick a meat thermometer into the center of the substrate and time one hour from the time the thermometer reaches 140F.  During this time, regulate the stove setting so the temp of the substrate doesn't exceed 160F.  You'll probably want to boil the water the bag is sitting in to bring the substrate up to temp.

Your gypsum question was answered correctly above.
