The light is a 24 inch Fluorescent Grow Light specifically for growing plants that I found at Walmart for like 10 bucks.

Greetings,
Here are a few comments for you:
1. Cold shocking cubensis (a tropical /sub-tropical species) is not required and may even retard fruiting.
2. If using a casing layer, most cultivators wait until the substrate is fully (100%) colonized before applying it. Then they incubate the cased substrate tray until myc. appears and then they put it into fruiting conditions. Some cultivators put the cased tray into fruiting conditions immediately after applying the casing layer, some after they see the first myc. at the surface and some when myc. has appeared on 20% of the casing layer. There is even a 'late casing' tek where you don't apply the casing layer until primordia or even pins appear on the substrate surface.
3. Your casing layer appears to have a lot of 'debris' in it (sticks and little chunks of wood). Moist wood is an excellent habitat for trichoderma (green mold) .. so be watching for it.
edit: the little bit of lime in your jiffy mix casing layer will help ward off the green mold.
Mist and fan.

Thank you for your help uncle_rico! I'm glad I'm doing this correctly then.
Yeah there is a bit of debris in my casing layer ;x so after I read your post I went to pick out as many sticks and wood chips as possible with latex gloves on.
More mycelium is starting to poke through the casings! 
I can't wait to start seeing some pins showing 
I'm putting my other casing into my FC in hopefully 2 days. I put a casing layer onto it today and there is already myc growth showing at the top.

In the above pic of your cases. They still look really dry. I like to see the dark color like the very last pic. I would take your water bottle and straight spray into the cases until you see a nice layer of moisture. It wont hurt anything this is the time to take advantage before there are pins. One of the above pics looks like your getting some shrinkage too, this could be because they are too dry or because the myc is going to town in the substrate. or both. But I really recommend getting the moisture right. The tupperware in the top pic looks great. I would dunk and roll in verm, since verm helps with moisture control you can then birth it and compare the growth to your cases, if its much faster than you know you have a moisture problem in the cases for sure.
For the future, (and Im not sure if I read wrong) I would incubate cakes until 100% colonized, then case and re incubate right away until you can see the ring of mycelium expand to the bottom of your tupperware. this should be a good indicator that your case is ready to birth.

I think it's just my camera that's making them look so dry. My cases are very moist and a very dark color in person, i mist alot.

You seem to be doing pretty well mate! The only observation I'll comment on is that your layer of perlite seems a bit shallow. I believe that 4-5 inches is optimal.

Hi there Moniker_Mike! Yeah I know lol I read that 4-5 is optimal but my FC is doing just fine with inch and a half of perlite that's in there. The humidity is always at 99% and there is just a little bit of condensation on the walls not too much though.
