My friend made up some rye grain quart jars. He put double coffee filters held by an elastic as a lid. he put tinfoil over the filters and pc'd. When he inoculated the jars he just removed the tinfoil stuck the needle through the center of the filters and knocked them up. he then put another coffee filter to cover the inoc hole and held that with another elastic. The problem he thinks hes running into is the grain looks dry. he simmered the grain for 45 mins and loaded the jars. Should it look dry? hes just thinking maybe with the coffee filters the grain gets too much air exchange which dried the grains too much. Let me know what you think.

I think you were right when you thought there was too much air exchange. Next time try this: Grain into jar, filter (not coffee, but something like a mycron filter, or tyvek), lid of jar with two holes (one for air exchange and one for innoculation), then either coffee filters or aluminum foil.

Yup, they are or will be too dry made the way you did. I use plastic lids with two 1/4 inch holes & the moisture content comes out right every time.
