pinning cakes

well she has another question here it is:

My ex wants to know if she can crumble and case some cakes that are pinning and may be on their second flush? These cakes look very bruised but dont show signs of any contams?

I tried this once and had no problem, what I did was pull all pins off, dunked the cake and then broke it up and cased it, the results were ...... varied, but not disapointing.

Wait til the second flush. When you case the you expose more of the cake for fruiting so the brused sides shouldn't be so bad.

Now that I think about it let the pins tell you, if it looks like a lot don't miss out, but if there are only a few pull them and dunk. Sounds like you'll be fine if you decide either way.
