You could probably adjust this recipe to use for bbq, but I used this for tacos. All you could have to do is adjust the spices accordingly.
-Pork shoulder (weight doesn't matter, but I think I had a 1.5 lb piece) -Can of crushed tomatoes (you may need more if using a larger roast) -Several cloves minced garlic -Cayenne pepper -Cumin -Chili powder -Ground sea salt and fresh ground pepper to taste -Red pepper flakes
1. Debone the roast and cut into manageable chunks to help the cooking process. Also, if working with a fatty piece, cut as much fat off as you can. There is enough internal fat that you don't have to worry about dry meat if you cut it off the outside. Put pieces into baking pan (I just used a bread pan since I didn't have a large amount to cook).
2. Cover with crushed tomatoes
3. Add seasonings and stir to get it mixed in good.
4. Cover with foil and put in a 250-300 degree oven. I think I did 275, but it's not really a big deal as long as the temp is low.
5. Leave in oven for 4-5 hours. At about the 2 or 3 hour mark, make sure there is still a good deal of fluids in your pan (there should be) and try to flip the meat to allow all of it to be covered by the tomatoes at some point.
After your 4 or 5 hours, fish out your chunks, shred the meat, spoon some of the awesome juices from the tomatoes and meat and stir to ensure that the meat doesn't dry out.
Serve with some tortillas and fixings and enjoy!
Alternately, the spices could be changed to includes brown sugar, vinegar, liquid smoke, etc. with the tomatoes to make delicious pulled pork for bbq sandwiches.

That sounds bad ass..
I do something similar but I cheat and just use cans of enchilada sauce and pork. Still I cook it for many hours and yes it is great for tacos..

If you're gonna make it I suggest either adding a good deal of cayenne and red pepper if you like spicy, b/c I had a taco and it didn't get a lot of the spice I would have liked.
Either that, or dish it up with some spicy salsa.
