What the hell contam is this????

A while back, I posted about a problem w. some rye grain jars. How they were flooded in the bottom w. some nasty looking brown liquid. Someone suggested it was a byproduct/waste/mycopiss. Well my friend went to case them today and they are definitely contamed. They had a bad odor, that reminded him of BAD sour milk. Here are some pics, has anyone ever seen this before??

I don't know man. These things stank like hell!!! My friend just said screw it and chunked em. The humidity rate in the incubator never got above 20%. Or are u speaking of the water content. He has noticed that when he uses a 1:1 ratio, the grain is hard to break up cuz it's so gummy. Instead of breaking apart it just kinda squishes apart. He may start using less water. Currently it's 200 gr. rye to 200 gr. water. What would u guys suggest? 200 rye to 180 water sound ok?? Thanks!!!

Without a doubt those jars are contaminated with bacteria.
Edit: A good way to get proper water content with grain is to simmer it on low heat for 30 minutes and then rinse/drain before packing the jars for PC'ing.

I have had that before on millet. It smelled like shit and stunk up my appartment for days just from opening the jar once. I would throw those out jar and all.

I'm having lots of grain trouble, too. I thought I had my ratio right by using 50:50 h20:rye. My jars haven't looked as bad as those above (well, maybe a couple), but I think our problems may be similar. I did my first simmer last night, but got nervous when I saw the very first glimmers of white peeking out of the grains. Do what degree do you allow the kernels to pop before draining? Do you remove from heat at the first site of white, or allow a percentage of the kernels to pop. If so, what percentage would you say are popped when you remove from heat and toss in strainer?
