Got a Shiitake Kit in today, Have a question

Ok so I ordered a shiitake kit where all I have to do is fruit it. I wanted to get the kit first to try them out and see how they really taste and if I like them, then i'll go ahead and start making everything myself. So im reading the directions and it says to cold shock the block by placing it outside over night or in a bucket of icecold water for a day. My question is. Does it have to be in water? I have a small fridge thing I keep sodas in my room that goes down to 33 degrees. Could I just leave the block in the fridge for a day? Do I need to take it out the bag or can I leave it in the bag while its cooling ?

It would only need to be in a bucket of water if the block needed re-hydrating. Your fridge will work fine. Fridges tend to dry things out, so I'd say keep it in the bag and stick it in the fridge for a day or two.

You will need to put it in water anyway for the next fruiting. I usually use a regular cooler with some cold water and add a good size block of ice in it. A solid ice block lasts longer, but you can use ice chips if your fridge makes them. I keep the blocks submerged with a cinder block. You can use bricks or flat stones just as well. If it is really cold outside where you are, I would recommend freezing some water in plastic containers (even a soda bottle will do), and putting that into the cooler, and keep the cooler outside to minimize warming up the inside stuff.

I think it will be around 40 tonight. Thats cold for here lol. So if I just put it in some water with ice, leaving it outside in that type of cold will work? Or would it be better to keep the bucket of ice water inside where its 70-75? The block is all brown and everything. I am asuming I just need to cold shock it and not have to rehydrate it so i'll probally just leave it in the bag for now. That would be the best thing?


Ok, just really looked at the bag. They actually have small pins on it already. Just a few. Would dunking the whole thing in water work with pins on it? It does kinda look dryish though but I havent opened it yet.

If you already have pins on it, then it does not need cold shock or water. Take it out of the bag and put in your FC.

From your site lol. I ended up sticking it in the mini fridge thing. Its been about 12 hours. I'll just stick it in the FC tonight when I get home from work. I guess the worse it could do would just delay it a couple of days. Cant wait to try them though. Been reading good things about the taste.

Graham could answer this better than I because he knows his strain, but some strains of shiitake are ruined by dunking with a block of ice. That's too cold.  Even refrigerators are too cold unless they're turned up to the warmest setting.  Around 45F to 55F is plenty cold to induce fruiting.

I usually dunk with just cold tap water, especially during winter.

Shiitake is great in a stir fry.  Be sure to cut the stems off first and only eat the caps.  The stems are tough and nasty.

The warm weather strains of Shiitake do not like ice, but they are rarely if ever sold as kits or plugs. Graham?

You can use a sprayer hose from your sink to water it down. It should be fine. Just begin to fruit it.

Its normal for the surface to look dry, and it will dry out a few hours after you mist it.

First flush does not require a soak, but you can. Flushes after the first flush require dunking (completely submerged for aprox 4-12 hours). Fruit at room temperature to 60F. Make sure you apply a light mist, daily. And make sure they get some indirect light.

80-90 rh is optimal but it will fruit at lower Rh.
