it's winter, it's cold, you've spent the entire day chopping wood outdoors in the snowstorm like a real man.
now you want something warm, something beefy, something soupy .. well here we go !
ingredients: 3 carrots 1 yellow carrot 1 chunk of celery 1 little bush of parsley 1 parsley root 1 onion bit of leek approx 700 grams of cow leg meat, with bone pieces one laurel leaf spices
ok, here's the leg meat :
it's got bones, these are important for the flavor b/c of the bone marrow:
dice all the veggies:
cut beef in chunks:
throw beef and a diced onion in preheated pot with some oil:
stirr until slightly roasted before beef start to lose moisture:
add veggies stirr some more:
thow on ~500 to ~750ml boiling hot water and add onion peels for cloration aswell as one laurel leaf, about 10grains of black pepper:
crank it up to a boil and put the lid on for one and a half hours:
get a fork and remove the bones/meat, seperate the meat from the bones and start to rip the meat in really small slices and pieces. then put all back in and continue cooking it:
half an hour to an hour later, toss the bones, remove the onion skin and the leaf, add salt to your liking or other spices:
i love noodles with my stew :
enjoy !
brb, chopping some more wood

looks great, but I question your methodology. Would it not be easier to roast/boil beef before adding vegetables, so as to save time digging bones out of your soup, not once, but twice.
Otherwise, looks like a very good meal.

im not quire sure if i get you, i do not really want to roast the beef its just to color it slightly along with the onions to get it some additional taste.
taking the bones out is really no problem, with some big iron forky style thing i have its done within seconds. i dont know its name.

looks good.
there's a little trick i use when making stew. when chopping up the potatoes, leaves some in big chunks, but then also take a couple and slice them really thin. these thin slices will dissolve and thicken up the stew very well, so you don't need to use other thickeners like flour or whatnot.
cheers.

i was taught to dredge the beef chunk in seasoned flour and brown them prior to braising...i couldn't find a recipe that reflected that.
