The faster they dry the more bruising occurs. Bruising though wont hurt potency and its nice that is bruises so you can prove to your friends its legit.

But if they where white I could prove to them it wasn't picked. My friends always seem weary, because around here cultivated mushrooms tend to be spotless white. Also, a food dehydrator worth it?

It'll be worth every single penny, its much faster than fan drying, you do NOT lose any potency and you get perfect looking white and gold mushies.

yes, heat will not degrade potency. You can also set oven on lowest setting and place a thick cardboard tray of mushrooms on very top rack with door proped open on its own and they will dry without bruising mush in about 4-5 hours for BRF cake sized ones.

how do you harvest a mushroom w/out picking it,go for the base

Back in the “Olden Days“, some of my compatriots would soak fresh fruit in Ascorbic Acid (Vitamin C) water for a bit before drying to retard oxidation. Worked pretty good. Don’t recall the particulars. About the same as apple slices.
I figured out how to dry in a frost free freezer. Beautiful white, stone hard, barely wrinkled, eye appeal plus. Give it a try if you have the resource.
