Yeast contam?

I have an occasional problem with grain that, apart from colonising poorly, has no obvious contamination, however when I smell it it smells strongly of fermentation. TMC's "Key to the common contaminants in mushroom culture" is no help. Any ideas please?

That smell is from yeast or bacterial contamination. Although you're not able to distinguish any color out of the ordinary, you''ll see that the grain sometimes become a bit slimy, the unpleasant odor is due to fermemtation as the alcool becomes a biproduct of the contam activity. Even if your spores germinate and try to colonize the grain you lost the battle already, it's very hard to get rid of any bacterial contam. You should consider on reviewing your sterilization techniques, i would recomend PCing your grain for about 80-90 min. If you are using rye, try using wheat instead, i personally find rye very prone to contams. You also could do a mycelium direct transfer. Colonize half pint of BRF jar and transfer 3 or 4 small portions (1 square cm) of colonized into the grain jar. Of course you have to do it on a glove box or something sealed. This way the mycelium takes over the grain very rapidly, leaving the probable contam with less room to grow or even germinate.

Thanks. It's a very rare occurrence so I'm not dying to fix it, but is there any way to identify the specific organism?

Only with a microscope. You could try to learn something about this organisms, try this link for a start.
