Well when we sell the house here in GA, and cash out the 401K, we will have about an extra 100K to work with. Put 50K down on a house, 35k down on a location for buisness, and the rest including the loan, on supplies and startup.. Really only need one or two employees, if that. Maybe three. And a mushroom beer.hmmmmm any suggestions?? Azur ale... I like the sound of that.

you'd have to play around. There is a micro brewery in white center that i used to live near (south seattle) that might be able to help initially... The guy who invented Red Hook sold his recipie to the people who run budweiser, and now owns that brewery...

You could make a reishi ale or candy cap brown.
It sounds like your finances are in the right place, but I would consider at least 40k to get the restaurant running and money for the first 6 months of getting established. Also, you'll have to get a liquor license and jump through all those hoops. If you settle on Oregon, you'll want to put in Oregon lottery to generate revenue. IDK about Washington, though.
Do you have a bunch of mushroom cultivation equipment already? I'd imagine at least 2-3 grand for that alone...laminar flow hood, et cetera.

I have minimal equipment. But I looked up the apps for washington liquour licsences, and for a brewing licence and a Spirits beer and wine license, It will only be $2600

Ganoderma tastes horrible though. I can't imagine anyone drinking it for recreational purposes. I could have it on hand for medicinal though.. Another good idea.

Good point flip. Candy caps you have to hunt for and they're mostly in California, but at least they're sweet and taste like maple. Are cordyceps horrible tasting? I'm just trying to think of something you could cultivate. Oyster mushroom beer sounds god awful.
Making homemade kombucha ain't a bad idea either. In fact, i'm not sure I've been to a restaurant that offers kombucha made on site.

I think I have a couple of ideas... I know the economy is not doing well, but this will be something that has not been done before.. If there are any people who would like to partner up, just let me know. I would love a knowlegdeable partner. otherwise, I think I can produce the capital on my own. Feel free to post anymore ideas. Popular micro beers, and eats would be awesome. Anyone who assists me in this plan. ie. ideas, and set up, will have a permanent 75% off every purchase, including beer. This is not in any way a joke. I am writing the buisness plan as we speak. J
