From the videos I've seen, they seem to use a variety of breeds...mostly terrier types.

Yes they are delicious with Chanterelles or Black Trumpets in a cacciatore.
Maggie sniffed out over thirty of them for me this past Fall.

My terrier/mutt sniffed out a squirrel yesterday and unfortunately before I could stop him snapped his little neck :/
There's a few coyotes where I live though, so I'm sure it wasn't wasted.

Not sure if this was mentioned in this thread at all so I'm just throwing in what I know.
Supposedly pigs are the best simply because truffles produce a similar chemical trail that's similar to a pheromone that attracts pigs.
The switch to dogs was made because owners of said pigs would lose fingers on occasion while actually having to fight the pig for the find.
So in closing, I do believe that pigs are still the absolute best at finding them.
