I still have these for sale. The Kershaw is VG10 steel (a very good steel) and is made in Japan. The SOGs are made in Taiwan (not china) and I believe are AUS8 steel, which is pretty respected as well.

I bought this after 9/11:




The scales are Carbon Fiber/Rosewood. The liners are anodized Titanium. The blade steel is CM154. It's an Alan Elishewitz design Benchmade.
My next one is this:


I picked this up on fleabay for $65. I like the Kydex sheath. This one is unique because it is solid VG-10 (not laminated).
Then I had the Fallkniven fever. I bought this:

It is laminated stainless steel with a 3G steel core. It was a test knife that you had to buy directly from Fallkniven. There were only 110 of these made. You can buy a production knife with the same construction for much less now. This knife is 10 years old. I opted for the Kydex sheath on this as well. It was over 2 bills when I bought it.
Next up was another out of production H1 that is solid V-10 steel:


I liked it so much, I bought another one:

Both are solid VG-10. You can get a laminated H-1 with 3G core but I don't think I need another one.
Then it was time to replace my EDC with this:




It has a 3G core and Red Quince wood Burl scales.
It is, in fact, the most comfortable small knife I've ever handled. This one is out of production (Red Quince Burl) as well. It isn't cheap either.

KrishnaDreamer is right. VG-10 and 3g steels come from Japan. They make the best steel in the world.

My newest knife. I took the photo on my iphone, will take one with my DSLR later.
And forged Watanabe 180mm gyuto(almighty) kitchen knife. Made with white tamahagane (japanese carbon steel).

I'm using "Blue" steel from Hitachi for my kitchen knives. I paid $50 for the ones I have and they have doubled in price in 7 years. Same with my blue steel chisels.
I sharpen them with 60 micron 1" wide belts on a 1" sander. It's still a bitch. I have to do the 3G as well.
I'd love to have a Watanabe 180mm gyuto.

That's their standard stuff, it's all hand-forged, hand folded etc. Beautiful work, their professional knives all use blue steel instead of white, but you'll pay a bit more.
I personally love the patina that a carbon steel knife forms after years of use.

That whole lineup is for white steel, only the Santoku can be had in blue steel at an extra cost.
I doubt that we would notice the difference anyway.
Those things are SWEET! One can only dream.

Bootster, look at the top of the page for the words Pro Series. You're currently looking at their standard series, but there's a link at the top for Professional blades. They use all blue steel in the proline.

They are sweet indeed. As to the carbon patina, I doubt after 4 or 5 years you'll be able to tell the difference by looking at them, but I'll bet the "sharpness" could be discernible.
My first blue steel knife has stainless that you can feel where it meets the edge (blue steel line). I don't know how to get the stainless off to come to the edge of the blue steel seamlessly. I was drunk once and cut a chicken up with it. I chipped the edge and sent it back to get the "forever sharpening" warrantee, and they did a fabulous job.
Maybe I'll just gather all of them up and they'll sharpen all of them.

I have seen some amazing knives on here...
I have a few knives I use most often when venturing out into the wilderness.
From top to bottom Gerber LMF, Carbon Steel, Made in the USA, Full tang very thick and is my all purpose knife. Smith and Wesson Neck/Boot knife. My latest handmade knife Ive had the pleasure to take this out on my last hike with and served all my purposes.

I got myself a few japanese whetstones, 1000 and 6000grit. Able to sharpen the Watanabe to ridiculously stupid sharp levels. Love it!
I'm getting myself a few carbon steel outdoor knives and a carbon steel hatchet (with wood handle) soon.

1000 --> 6000 grit is a VERY big gap, make sure you are completely ready on the 1K before you take it to the 6K or you'll shred that baby up.
I wish I had a 6K.
I have 2 dual high quality dual Japanese whetstones.
One's a 120/1000 and the other is a 1000/3000
I use the 120 for blunties and the first 1000 for knives that need some serious sharpening. When almopst done I take it to the second 1000 and finish off on the 3000.
A 3K wont get them razor sharp but it does get them Holy Fuckballs Sharp compared to quality factory knives.
I wish I could get a 6000/12000 dual, that would split atoms lol

I'm working on making my first knife. A crooked knife (Mocotaugan). This blade is kinda fugly, and I didn't bother to polish it up pretty, since i just want to see how well it works.
I'm going to turn the second knife isn't another one, but only one side will be a blade, instead of both sides. This is a single bevel knife, and it's a bit of a pain to sharpen, but it's good practice.

Not bad for your first file knife man. I still remember my first one ever Use some 1600 grit wet/dry sandpaper and you can clean out most of the tool marks from working it. I usually use 1000 and then 1600 polishing them up. Buffing them up with blue jeans works fairly well too.
I use the bare minimum when it comes to modern tools when making mine, just more fun in my opinion 
Most files are made from pretty hard tool steel, and when you retemper and heat treat them they get VERY hard. Took me 3-4 hours with a variety of sharpening devices on my last one to put a clean edge on it.

Just two from my collection. The kissing crane is just a gorgeous knife with an awesome blade! The other one, the buck flip is my daily carry around, also a solid ass knife!

Yeah I picked up some auto grit, 1000, 2000 and 3000. I have a stone too as I mentioned, but with the curve in the blade, the paper is so much easier, I wrap it around a pencil and use the pencil as a sander!

I could polish her more, but I tempered and hardened the blade earlier today and tested it on wood. Beautiful, I can't wait to actually start carving stuff. I need to make a handle for it now.

Heres my three favorite knifes
The top two are ww2 military issue combat knifes and the bottom is an old swiss army knife.

The top one is a Cattaraugus and the middle one is a Pal. I use them alot especially the middle one, goes everywhere with me in my backpack and gets alot of use. It is also my mushroom picking knife.
