Finally found a bit of time to share with you all my latest growing results.
I am very pleased with my P. eryngii bottle culture test (a couple been harvested already):

I also have three bags of Lions Mane, and one looks almost ready. Do you think I should harvest it now or wait a bit longer?

This hericium looks very good. Better eat it now! Those needles might grow longer, but at some point they turn brown quickly and then it's too late.

Looks as if the CO2 is a bit high for the hericium. The center of the mushroom should be nice and thick, not stringy like that one. Increase your air exchanges quite a bit to see if it will start to fill in the core.

Oh my god, people! Hericium is the best tasting mushroom ever! Quit wasting your time on morels and chantrelles. Hericium is IT!
Seriously, it was delicious. Delicate and flavourful. Reminded me of lobster, as GGMM promised.
Hotnuts: it did have fairly thick middle. I think waht you see on the picture is just extra "tentacles" that are covering the real top. Besides, all my regular oysters are fruiting normally, with normal size stems, so it seems ok FAE wise. But thanks for caring and saying!

Interesting... If you get a chance, would you mind sharing with us how you were able to successfully grow these? What kind of spawn substrate did you use, did you transfer the spawn to another medium, what fruiting conditions?
I think I have some sort of culture for Lions Mane and I haven't touched it yet because I always thought the lions mane fruits were creepy looking. I guess I should go ahead and try these out!

You definitely should give them a try. They are unusually looking, but they are superbly tasting. So good, that my wife said "please, keep growing them". This was a first 
I did a standard cycle with them:
Agar -> WBS spawn in a quart jar, one shake at 5 days. WBS spawn -> 3.5lb supplemented sawdust bags (one quart of WBS per 4 bags) Grow out at 70F for a couple of weeks (maybe a bit less), then poke holes in the bags (just a few, 2-3 per bag) towards the top of the substrate, and into the fruiting chamber (no chilling necessary). FC is at 65F, 95% RH. Light in the FC is a single spiral type fluorescent bulb, cold white (5500K), 75W equivalent.
Thats it, folks! No trickery, and one lobster saved.
I must mention that I prepared them by frying on a hot pan with a bit of corn oil, with a small onion and one garlic clove, minced. Towards the end (when most water is gone), I added a teaspoon of butter, pinch of salt and a tablespoon of very light soy sauce.

Maybe I did something wrong with my lion's mane, but the mushrooms I fruited in my FC had a really funky texture after cooking. They were kind of soft, with a sort of... semi-crisp texture, like that pickled cabbage stuff they feed you in Japanese restaurants. I'm going to try fruiting a block outdoors to see if it improves things.
Also, do not cook these with tomatoes. It just does not work, in my culinary opinion.
