now, i am definitely impatient. in fact, it's all i can do to not smash open the jars and munch away on the mycelium. but, given this jar, would it be OK to move to the bulk substrate, or should i wait until i can't see anymore grain?

pasteurize your substrate now, spawn it in 2 days, it'll be ready then.

No I` wouldn`t use that until all the grain has colonised. You`ll regret it if you do. You say you`re impatient now, wait until you loose everything and you have to start again. That looks like a big jar there, so you are most likely expecting it to colonise as fast as a pint or half pint. There`s alot more grain so the time deffinatelly is longer

IMHO, Wait until they are 100% colonized, then wait a few more days -=- after that to spawn grain or seed out of a jar. If you don't? Your just bettering the odds that you will fail in getting the end result you want.
You cannot rush an apple, grape or vegatable into ripening -- sooner than it does naturaly, at it's own pace. You can give it optimal conditions to ripen in, which tends to get it ripe ASAP.
Myc colonization is the same way. As is colonization of any bulk substrate. Be patient, it will happen.
IMHO, pacing around like an expectant father, gnashing your teeth, wringing your hands & inspecting the jars every 5 minutes just makes the process go SLOWER. Chill.
