My jars are almost completely covered in mycoleum, do they have to be all white or can they still have spots where they are not inoculated.

Totally white with little pins developing , is birth time .
Is this grain innoc or are you making cakes ?

After they are completely white, give them 1 more week.. This will assure the center is colonized as well.  Then birth, or dunk for 12 hours.

Personally, I don't wait for pins to form when I birth, but that's personal preference. Just make sure the jars are 100% covered in white. Usually it's best to wait up to a week after the outside is at 100% just to make sure the center of the cake has been colonized.

Like mickey says, Rather birth before pins form.
I find if pins form the mycelium converts to a fruting stage and will be slowed if you now crumble and case.

Dunking is usually recommended.
