Oysters are fairly tolerant to humidity and temperature fluctuations, but they need some minimum levels to fruit. Normal room conditions (70-80F, 25-40% RH) are not within that range. At the very least you need 70% or higher RH. It is not that hard. For a singe block you can just make a tent out of plastic film (Hardware stores sell plastic film for covering floors and furniture when you paint). Or you can get a large plastic tub at WalMart or similar place. For a bigger setup, there is a "plastic wardrobe" available. You might want to put a wire shelf inside to use the whole space.

Just lay the wrapper from the straw log back over it loosely until after pinning, and then you can remove it if you're running a humidifier or two in the room.  They fruit very well in open air as long as it's not too dry.  Mist often and make sure they get very bright light from either a window or fluorescent.

What I do is just cut the block open on one side and leave the plastic on the rest of the block and you will get fruits from the open end.  That way you can limit the water loss.
