I honestly haven't a clue what anyone means when they say this. How does one love a vague and nebulous concept that could be pointing to an infinitude of things?

It could also be people desperately wanting to feel like a part of something bigger, but can't cope with the idea that they're aren't. If they are, it's a part of the human race, but these people don't see it because they only differences, like what side of that line drawn on the ground you grew up on.

When I say it I mean that the scenery is beautiful, and when I can I enjoy spending time there (Scotland) because of (generalisations of course) the atmosphere and feel of the cities, the attitudes, openness and general friendliness of the people. And the whisky.

It represents many, many things. Interestingly, I think very little of it involves the "country", given it is a fabricated concept anyway. On an unconscious level, I think patriotic statements are another example of social bonding phenomena. Identifying with a source of power is obviously advantageous, but there are also numerous evolutionary benefits to group uniformity (or at least agreement).
Most blatant forms of patriotism are always public. Flags, bumper stickers, signs, conversations, etc. It involves human relationships more than imaginary borders.
